Mmmmm Food...

I haven't been out and about too much lately as I have been dealing with a bit of a cold, but I have been making some tasty food at home to occupy my time. First up, some lovely pizza, not made by me technically but by my lovely housemate and her boyfriend, thanks guys! Pretty easy really, just cheap pizzas with lots of extras piled on top, including goats cheese, marinated artichokes, sun-dried tomatoes, salami, red onion and aubergine. I often make fresh dough but this way works well if a bit short of time/motivation.


I also made some easy stuffed peppers (not on the same night!) using a recipe from Hugh Fearnley Whittingstall's River Cottage Veg Everyday, which is a brilliant cookbook. I adjusted the recipe by using fresh basil instead of pesto, and I put in some chopped sun-dried tomatoes also, as I love them! I made fine green beans with a bit of garlic and olive oil to go on the side.

Surf Wednesday

So yesterday everyone in my office skived of work for a day at the beach, which in my utopian view of the world would of course be compulsory, who wants to work five whole days a week?! This gorgeous stretch of sand is in south Wales at the edge of the Gower. We headed up to the village of Rhossli at the south end, I have also been to Llangennith in the past, which has a path through the dunes to the centre of the beach. There was a tiny little bit of surf so we had a splash around in the sea, and we also took in the stunning views from the cliff top complete with welsh ponies and foals, and this being Wales, sheep of course.





The trouble with days like this is it makes me have no desire whatsoever to get a real job when I finish my PhD, I just want to go and bum around on a beautiful beach every day and learn to surf properly...

Last Days of Summer

Despite the fun weather we have had this summer, it has been quite an event, what with all the awesome sporting distractions going on. There have even been the occasional days of sunshine, despite there often being some exciting clouds scuttling across the skies to go with it. I always enjoy this time of year, looking back on the summer and fun times that have been had, plus that 'new school year' feeling I still get despite being well past that. Here are some pictures of a little bit of remaining sunshine, I hope to squeeze out a few more days of fun before the rain returns. I love standing on the edge of the cliffs looking out to sea, it makes me feel positively poetic.



I love the dramatic mountain scenery that I experienced in the Alps, but the soft undulating hills of the Dorset coastline just feel like home. Although they don't really feel that undulating when you walk up them! And there are some good cliffs...

And finally, and most importantly...

I grew carrots! and they are super-tasty :)
